If you have ever had my chicken tacos, than you are dead. you aren't even living because you have died and gone to heaven. They are easy peasy to make and only call for 3 ingredients! 

Trader Joes taco seasoning packet
Chicken Thighs (2)
1 Jar of Trader Joes Mild Salsa

Dump 1/2 of the seasoning packet in a crockpot over the thawed chicken thighs. (play with the spice level, that trader joes seasoning is pretty spicy!) and then pour a little more than half of the jar of salsa on top of that and you should have something like this.
Let it cook on low for 6-8 hours and then use two forks to shred it when its done. you will have the juiciest and perfectly cooked spicy pulled chicken that will literally BLOW YOUR MIND. 

Of course top it with all your favorite taco toppings and chow down.

This portion feeds my husband and I for two nights, allowing 2-3 tacos each night.

One thing I miss on a Gluten free diet is CRACKERS!! Of course I've found some good rice cracker substitutes but a lot of the time I feel all 'brain foggy' when I add in too much grain to my diet. I did a little pinterest research and found THEM! The only cracker I will ever need again and they are so stinkin' simple.
I doubled the recipe, (you'll want to too) so my ingredients list will be double the original recipe from HealthyLivingHowTo.

All you need is:

1 2/4 C. Almond flour or Meal. (I use the almond meal from Trader Joes)
2 Egg Whites
1/4 tsp. Garlic powder
1/4 tsp. Onion powder
1/4 tsp. + 1/8 tsp Celtic sea salt

1. Mix all ingredients in a small bowl
2. Sandwich the dough between 2 pieces of parchment paper
3. Roll out until the crackers are about 1/8 inch thick
4. Cut into squares with a pizza knife
5. Stick them into the oven on a baking sheet that is lined with a double layer of parchment paper
6. Cook for 12-15 minutes at 325 degrees
